From the Deck – #KaiCapische – A Taste of Puglia
It’s a breezy beautiful Saturday afternoon here at Maluaka beach in South Maui and we can feel the excitement as our small group of passengers get ready for A Taste of Puglia Sunset Cruise.
This evening, Chef Christopher Kulis of The Market Maui by Capische will be joining us aboard Kai Kanani 2 for an Italian-themed wine and food tasting. In the past Chef Kulis has treated us to the culinary delights of places like Argentina, Greece, and Spain as we sailed the Makena coastline. We can’t wait to see what Chef Kulis has in store for this month.

Kai Kanani is a beach loading catamaran. Our crew gives us some safety tips and we wade through the shallow water to the greetings of Captain Cary and Chef Kulis. Captain Cary introduces our crew of Diana & Fred – they will be our waiters on the water this evening. Chef Kulis explains our menu for the evening is from the area of Puglia, Italy. Puglia is located in the heel of the boot of Italy and is known for it’s handmade pasta, fresh fish and wine, all of which is on the menu for this excursion. Buon appetito!
Market Cured Meats & Cheeses
As we leave the Makena coastline, Chef Kulis presents us with a sampling of Market meats and cheeses served with Canella Prosecco. The wine has a fruity fresh aroma that pairs perfectly with the cheese.
Passengers find various places to sit on the bow, inside the cabin, and a few seaworthy folks join Captain Cary at the helm.
Soon Diana & Freddy bring us summer squash and farrow salad. The fresh ingredients were grown here on Maui and the pasta was specially prepared by the Market.

Bradda Dwight serenades us on the bow, while Diana sneaks in to top off wine glasses, and Freddy delivers cold cups of local beer.

The next course is a fresh Ahi crudo with caper berries and peppers. The ahi has been recently caught and delivered directly to Chef Kulis up at Capische. The caper berries are a perfect accompaniment to the fresh fish.

Meanwhile, Captain Cary expertly navigates away from the shore to the wind, and before we know it, we are sailing and there are smiles all around.

Our next course is a warm bowl of pesto pasta with pumpkin seeds, followed by cocktails of our choice.

Next to arrive is a delicious fresh snapper with local veggies and meyer lemon.

The sun is slowly dipping below the horizon when Chef Kulis serves the grand finale, a decadent desert of S’mores in mason jars. Captain Cary angles the Kai Kanani 2 so Freddy can take perfect sunset photos for each couple.
